Ingredients:
1 cup Karuppu Kavuni Rice flour
1/2 cup grated jaggery (adjust to taste)
1/4 cup grated coconut
A pinch of cardamom powder
2-3 tablespoons ghee
Water as needed
A pinch of salt
Instructions:
In a pan, roast the rice flour with a pinch of salt on low heat until it turns aromatic and slightly brown. Remove from heat and let it cool.
In another pan, melt the ghee and sauté the grated coconut until it turns golden.
Mix the roasted rice flour, jaggery, sautéed coconut, and cardamom powder in a bowl.

Ingredients:
2 medium-sized chow chow (chayote), peeled and cubed
1/2 cup moong dal (split yellow lentils)
1/2 cup coconut, grated
1 tsp cumin seeds
2-3 green chilies, slit
A pinch of turmeric powder
Salt to taste
Curry leaves for garnishing
For Tempering:
1 tbsp coconut oil
1 tsp mustard seeds
1 tsp urad dal (split black lentils)
A pinch of asafoetida (hing)
Instructions:
Pressure cook the moong dal until soft. Set aside.
In a pan, heat coconut oil and add mustard seeds. Once they splutter, add urad dal and asafoetida. Sauté till the dal turns golden.
Add cumin seeds, green chilies, and curry leaves. Sauté for a minute.
Toss in the cubed chow chow and sauté for a couple of minutes.
Add the cooked moong dal, turmeric powder, and salt. Mix well.
Grind the grated coconut with a little water to make a smooth paste. Add this paste to the pan and mix.
Allow the kootu to simmer for a few more minutes, letting the flavors meld.
