Arun Pandian spills the Grains
We call him the Wizard of Rice. We sat down with this heirloom rice farmer in his habitat - the lush rice fields in and around Thiruvannamalai dist, Tamil Nadu. We were in for a beautiful crash course that involved not only history and folklore, but also biology and climatic science. The formula is rather humbling and simple - take what worked in the past, respect its relevance and seasonality.
ஒரு வீரமிக்கவரா இருக்கணும் வலிமை மிக்கவரா இருக்கணும்ங்கறதுக்காக அந்த பழமொழியை வழக்கமா வச்சிருந்திருக்காங்க.
This rice maketh man strong, courageous and helps build strength is the implication of the Tamil proverb aptly quoted by Pandian. Who wouldn’t want these traits today? We need complex carbohydrates that can help us withstand life’s daily highs and lows. We are what we ate as the saying goes.
Another poignant feature of this hardy, red rice is that it keeps the water levels in check in our body. How ingenious is this? We view processed grains as adding to the bloat, but in reality Maapilai Samba does the reverse! It also is a great rice to keep the bodily blood pressure levels in equilibrium, says Pandian. His words and wisdom come from growing, cultivating and seeing the results through generations and seasons.
Suggested Maapilai Samba recipe: You can enjoy this hearty rice as a meal through kanji, Pandian suggests.
Pandian starts with some history on how this rice was not typically a part of the common man’s plate and was enjoyed more on special occasions or by the more fortunate. We bring this to you straight from his farm full of antioxidants. Pandian says it has a positive role in balancing blood insulin levels which can be beneficial for pre diabetics or diabetics.

How can we enjoy this rice innovatively? Pandian has some surprising answers for us -
Ice cream! And we love making chakra pongal out of this.
A modern yield referred to as CR 1009 in agri parlance, Pandian says it also used to be called Savithri! The next time you eat your idlis maybe you can reflect that it’s brought to you by Savithri!
What’s beautiful about this variant as per Pandian is its climatic resilience. It stands tall against winds and rain. And generates a high yield. Combined with his organic farming methods, we bring to you your daily idli, dosa rice pure and free from harmful chemicals.
